Take Along Quinoa Salad

I have a few ways of making easy, take along salads.  Here is one variation I enjoy quite a bit. This recipe are meant for one person, one meal.  If you like to know how to cook quinoa check out this link:

For this quinoa salad you will need:

1/2 cup cooked quinoa

Romaine salad (as much as you want)

Shredded raw cabbage

1 shredded raw carrot

2 strips bacon, cooked in the microwave for 2 minutes.

1/4 cup plain yogurt (I like to use whole milk yogurt).  It can be greek plain yogurt as well.



Mix all ingredients in a container that you will be able to close up tightly and take along.  It needs to be fairly large.  This salad is not dense but has a lot of volume to it because of the romaine lettuce and cabbage.  I prefer cutting bothe,  the romaine lettuce and cabbage, into small pieces. Sprinkle it all with a little bit of salt and ready it is.
