Accident cup cakes – Wednesday, February 7, 2018

Yesterday morning I prepared a smoothie that just didn’t turn out right.  I used my usual 1/2 avocado and 1/2 cup whole milk strawberry greek yogourt, 1 scoop vanilla protein powder and 1 scoop plain pea protein powder.  Now I was out of frozen blueberries.  Then i decided to use 1/2 cup oatmeal and 1 tbs chia seeds.  Since I was in a hurry, I didn’t even taste it.  Poured half in my shaker cup and half in another cup that I would drink the next day.  Anyway, evening comes along, and I go for my smoothie before a BODYFLOW® class, and no way, it tasted terrible.  Not sure what went wrong.  Couldn’t drink it at all!!  Took it home and put it back in the fridge, because after all I couldn’t possibly waste all those good ingredients.

Next day I poured it all into my mixer.  Added 4 eggs, more chia seeds, flour, baking powder and brown sugar.  Baked it all and there you go, great muffins!!!
