Meatballs and Cornbread – Thursday, February 8, 2018

Today I made Meatballs and Cornbread.  The meatballs I made from scratch, now the cornbread I prepared from a box.  Instead of deep-frying the meatballs, I baked them alongside the cornbread.  They turned out really good.

This is my recipe for meatballs:

2 lb of ground beef

2 eggs

1 cup breadcrumbs

1 cup milk

1 tsp salt

1/2 tsp garlic powder

1/2 tsp black pepper

Now attention here:  today instead of 1 cup of bread crumbs, I did 1/2 cup of breadcrumbs and 1/2 of Farinha de Mandioca Torrada. This last product is from Brazil.  Mandioca is the mandioc root.  Here in America, we have mandioc flour, but this one I used, is more like a corse flour, looks more like cornmeal.  It is used a lot in Brazil, and today I tried it on meatballs and loved it. Mix all ingredients until everything keeps itself together, almost like a big piece of dough.  If it feels too soft, add a little more breadcrumbs.  If the dough is too tough, add a little more milk.  Roll the balls with your hands.

Now I am very disappointed with this cornbread mix.  It is soooooo sweet.  They should call it Corn Cake.  Just way too sweet.  Why, why, why???  I even added another cup of milk with a cup of plain cornmeal, plus two more tsp baking powder, and still, tastes like cake.  It tastes, good… but why so sweet?  Bought at Costco! Guess that won’t happen again.
