Food is the fuel that enables me to do what I do. I have learned how to cook at a very young age alongside my mom, shadowing her on everything she would prepare for us to eat. To this point, I have been cooking on my own for over 20 years. I have experimented with a lot of foods, done tons of mistakes, but also learned how to make some amazing dishes. So, to make a long story short, how do I cook today?
After trying out lot’s of processed foods out there, from canned, to boxed, to frozen, I have come to the conclusion that food tastes best and makes you feel better when it is prepared from scratch, just like my mom did. I buy raw meats, I get fresh fruits and vegetables every week, I cook my grains and beans at home, I make homemade pizza and I bake my own bread. Do I use canned and frozen foods? Yes, I do, however, always looking for foods that are minimally processed.
In a nutshell, my cooking is based on nutrient-rich foods, using ingredients that are as whole and unprocessed as possible.
What about organic food? Right now, I am not committed to buying organic exclusively. I find that organic foods are way to expensive, and since I have a family of 6, buying organic will blow my food budget off the charts. I get lot’s of foods at Costco Wholesale, Trader Joe’s, Vallarta Supermarkets and Food Max Supermarkets.
What about food restrictions? I don’t have any restrictions. I eat all meats, poultry, pork, and fish. I eat all grains, however, personally, I must control how much grain I eat. I have family history of obesity, diabetes and heart disease, therefore, the intake of grains are watched here 24/7. With that in mind, I have also completely abandoned the Low Fat/Artificial Sweeteners ideas. So, my cooking and eating habits fall more or less within the Paleo and Keto principles, with a moderate intake of grains and starchy vegetables and legumes. Taking that into consideration, I also experiment with recipes that fall within the world of Gluten Free, Paleo and Keto.
To get my cooking done efficiently, I rely on a few kitchen appliances. I own a Kitchen Aid Mixer, a Ninja Multi Functional Blender/Shredding system, a Crock Pot, a Rice Cooker and my latest acquisition has been the Instant Pot, which is quickly becoming my favorite. I have been cooking with a stove top pressure cooker for years. Now, with an Instant Pot, cooking is becoming even more satisfying. Now I do lot’s of stovetop cooking as well, also baking.
