Preparing Zuccini – Zoodles (pasta substitute)

Do you have a hard time liking Zuchinnis? Well, you are not alone.  It’s not my favorite vegetable either

However, I have found out that, because it is a vegetable with such a mild flavor, that it goes along really well with any strongly flavored sauce.  Shred it, saute it just a little bit, and there you go… can be used instead of pasta and rice in many dishes.  I like to pour Meatballs Red Sauce with it and it is delicious.  Here is how I make my Meatball Red Sauce:…-the-instant-pot/


Best if you have a food processor to shred the Zucchini. If you don’t have one, shred it by hand with a shredder.  Takes longer though.

My favorite food processor is the Ninja.  I have this multi-system and it works really well. It comes with a blender and food processor attachments.  Below you have a picture of the food processor attachment only, and I used the blade that makes the shredded Zucchini rougher.

Now when I decide to shredd something, I always shredd way more than I need.  I personally don’t like washing all these gysmos, so if ican shredd lots, refrigerate it and use it the next day, I feel like a winner.  So here I picked two very large zuchinnis. Shredd them both.  I could have shredded more if I had more.

After shredding, place half of it into a container, close it and refriegerate.  It can stay up to 3 days in the fridge, ready to use anytime you need it.

On the stove top, melt about 1 tbs of butter in a pot.

Add 1 garlic clove, choped

Let the butter melt and the Garlic become nice and crisp.

Add shredded Zuchinni.  Note: Zuchinni shrinks quite a bit after you cook it.  So if you think you have too much Zuchine, no worries, it will look a lot less in no time.

Let saute for about 5 minutes.  You will notice water building up and that is normal.  Zuchinnis are very watery and when you cook them that water realeases.  I let the Zuchinni cook for another 2 minutes, take it of the heat and then I remove that water.  If you continure to cook the Zuchinni until all that water evaporates, you will overcook the Zuchini, so carefull there.  I rather eliminate the water by draining it wih a spoon.


That is it.  Zuchinni is ready.
