How to cook Brown Rice Medley from Trader Joe’s

Here is a nice way to make Brown rice taste right. Honestly, I don’t really like brown rice very much. It never goes well with black beans and its taste and texture is always so rough. However, there are some blended options out there I actually find acceptable. This one here, Brown Rice Medley, by Trader Joe’s, is quite tasty. It is a blend of long grain brown rice, black barley and daikon radish seeds (I have no clue what those are, must be from the radish plant, lol…)
If you don’t have Trader Joe’s store, I am sure you will find brown rice blends in most grocery stores.
Now the trick to make brown rice taste nicer is to NOT cook it in a rice cooker. It will likely overcook and taste terrible.
Here is how I did it:

 

1 cup of Brown Rice Medley:

Handfull of chopped onion

Olive oil to coat the raw rice

1/2 tsp salt

Brown it until golden:

Add 2 1/2 cups water

Bring to boil

Cover the pot, let simmer on very low heat for 35 minutes.

Stir and serve.
