Great pizza making this evening. Toppings were mozzarella cheese, artichokes, palm of heart, black olives, pepperoni and left over meatballs from yesterday!!
This is my basic recipe for pizza dough:
2 cups warm water
2 tsp instant yeast
2 tsp salt
2 tsp sugar
1/3 cup oil (canola, olive)
More or less 6 cups of flour
Dissolve the instant yeast in warm water. Add salt, sugar, and oil. Mix in the flower gradually until you have a dough that looks and feels like playdough. Let the dough rise for 45 to 60 minutes.
With a dough roller, open the dough to desired thickness and size.
Hearts of Palm is one of my favorite toppings. This product is not popular in North America, so it’s not the easiest to find. Fortunately, I find it at Trader Joe’s. Hearts of Palm are preserved in a jar, they are white, and each piece is long and like a tube. Flavor is mild, salty and texture is soft. When you cut them up in slices, and toss it on a pizza, you will be surprised how delicious it is.
Artichoke Hearts also makes a delicious topping. I find them at Costco, at a great price, comes in a set of two big jars. After you open a jar, it lasts a long time in the refrigerator.
My favorite olives are California black olives. Again Costco does a great job selling them in bulk. They come in a squishy package. Once I open the package, I simply transfer the whole amount in a large container, close it and refrigerate. They last a long time. Good thing its they are sliced and ready to use.
