Two things that go really well together: chicken and potatoes.
Today my refrigerator looked quite empty since it’s getting close to the weekend. I grabbed my last ones: a few potatoes, 1 large sweet potato, 1 large carrot and 1 large onion. Peeled them all, added some salt, pepper and olive oil. Baked it all at 400 F, uncovered. I had in mind to add the garbanzo beans, but I didn’t after all.
Before puting that in the oven, I prepared the chicken. I used 4 thawed boneless chicken breasts. Seasoned it with salt, pepper, onion and sour cream. Cover.
I placed both dishes in the oven and baked it at 400 F for 35 minutes. I did not preheat the oven.
After 35 minutes are over, the vegetables are done. I take both trays out and stir the vegetables. Uncover the chicken and turn the pieces. I do not put the vegetables back in the oven. I covered them and leave them alone until the chicken is done. I put the chicken back in the oven for another 20 minutes, uncovered. Chicken is done when it is lightly golden.
